A largely popular dish especially in Southern United States and Mexico, cornbread is an easy and delicious staple for many. For myself, I love it as a dessert! In this post I explore the various cornbread recipes!
Directions are very straightforward and similar for all three recipes. First, combine dry ingredients (sifted) in one bowl and wet ingredients in another. Stir until moistened. Then coat a 9-inch square pan or a 5 x 9 loaf pan with cooking spray and pour in.
1) Healthy Cornbread
I would use this recipe more as a bread staple rather than a dessert because of its reduced sweetness and calories. Don’t get me wrong, I still love this recipe and think it tastes great even by itself!
1 cup flour
1 cup cornmeal
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 egg whites
1/8 cup unsweetened applesauce
1/8 cup margarine
1 cup skim milk
Baked at 400 degrees for 20-25 minutes

You can also have it with delicious strawberries!

2) Cheddar Cheese Cornbread
This original recipe is from a sister in my church! Everyone loves it and is a total crowd-pleaser. But I really couldn’t bring myself to carry out the full recipe so I halved a lot of the ingredients.
1 cup flour
1 cup cornmeal
1 cup sugar (1/2 cup is sweet enough)
1 tbsp of baking powder
1/2 tsp salt
4 eggs (2 eggs is good enough really)
1 cup melted butter (I would recommend 1/2 cup melted butter and 1/2 cup applesauce)
1 can of creamed corn1 cup grated jack / cheddar cheese (1/2 cup will suffice)
Baked at 350 degrees for approximately 30-35 minutes or until toothpick comes out clean
If you use the original amounts and don’t mind the calorie intake, it would definitely taste better!

This is what it looks like cut. I found it a bit dry because of the lack of butter. I did not use the applesauce replacement for this one.
3) Jalepeno Cornbread
I got this original amazing recipe online from this website

1 cup flour
1 cup cornmeal
2/3 cup sugar
1/2 tsp salt
1/2 tsp baking soda
2 large eggs
1/4 cup margarine
1/4 cup applesauce
1 cup buttermilk
2 small jalepenos diced (stir in only, do not use electric mixer)
1/4 cup cheddar cheese on top (optional)
Bake at 375 degrees for approximately 30 minutes

To top off this excellent recipe, have it with Honey Lime margarine!
Honey Lime Margarine
1/2 cup margarine
1 tsp lime
1 tbsp honey

This is actually my favourite recipe! I enjoyed the combination of the spicy jalepenos with the sweet cornbread very much as well as the fine texture of the bread.
The first time I baked it without the cheddar cheese

I absolutely love this recipe because of its perfect texture and will definitely make it again!
The second time I tried to add in some cheddar cheese on top. It turned out a little more savoury and was quite good. Obviously the cheddar is a tastier addition, but I’m not sure if it’s good enough to justify the calorie addition as well!

With the extra flavor, you probably will not need to make the extra honey lime though!
