Here’s a super simple crepe you could make using only 2 ingredients! And yes, you’ve probably already figured out that peanut butter would be one of them from reading the title 😉
These crepes are thin and delicate and so simple to make! They’re perfect for weekend brunches that are done in no time. And just as an extra added bonus, the 2nd ingredient you need is something you’d most likely already have sitting in your fridge.
2-Ingredient Peanut Butter Crepe
makes 5 crepes
- 4 eggs
- 6 tablespoons of Skippy peanut butter
- 6 tablespoons of water
- oil / butter to grease your pan
- Preheat your pan to medium-low heat, and grease your pan with a little bit of oil / butter
- Beat the eggs, peanut butter and water with a hand mixer or stand mixer. Whisk until you get a smooth consistency. (Please note that doing this without a mixer is possible but very time consuming)
- Pour the batter into your pan and cook for about 1-2 minutes on one side. Unlike pancakes, you don’t need to flip this crepe and cook it on the other side.
Topping and filling
- 2 bananas sliced into thin pieces
- Skippy peanut butter
- crushed peanuts
- dollop of whipped cream
- On each crepe, spread Skippy peanut butter on one side in the middle area of the crepe, and lay out sliced bananas
- Wrap the crepe and top with more bananas, whipped cream, crushed peanuts. Finally drizzle with Skippy peanut butter using a piping bag
